Elegant Pale golden rose. High intensity with hints of red and tropical fruit with a light subtle vanilla base. Full bodied and very good acidity, leaving a hint of red fruit with a slight lactic touch in the final aftertaste.

We select the best grapes from low production vines from our own Pinot Noir vineyards, with a planting density of 4,000 plants per hectare.

The grapes are collected in special boxes of 15 kg each. It is only harvested in the morning to maintain a good temperature in the grape until arrival at the winery. Once in the cellar, the boxes filled with grapes are placed in a cold room, keeping the grapes at -10ºC.

We select box by box and proceed to destemming and crushing. We place all the resulting grape paste in a stainless steel tank with a cooling system for some of the grapes to a cold film maceration (0ºC) for just two hours.

Then we pass the grapes to the pneumatic press to perform a light pressing of no more than 0.5 bar. We decant the must that is extracted from the press 24 hours in a static way and then we only take the clean part of the must to ferment to the new American oak barrels with a 400-liter unit capacity at a temperature of 16ºC. Once the fermentation is finished, it is kept on the lees until bottling.
